Gluten-Free Peanut Butter Chocolate Chip Cookie | Kathy's Kitchen Table Apparently these Gluten-Free Peanut Butter Chocolate Chip Cookies are a thing. Like super popular. I had never heard of them before until a friend gave me this recipe. I really wish I had known about these before our kids went gluten-free and dairy-free. Sometimes you just need a quick, easy cookie. And these certainly are that. Or, sometimes you get the urge to bake cookies and realize you are out of flour, oil or butter.

These cookies are satisfying to your sweet tooth. My kids love them, because they seem like “normal” cookies. While they have adjusted well to their new diet, there are some things that they miss. Cookies, being one of them. Thank goodness for these quick and easy cookies!

Gluten-Free Peanut Butter Chocolate Chip Cookies
 
Ingredients
  • 1 cup peanut butter
  • 1 cup sugar
  • 1 egg
  • chocolate chips (to taste)
Instructions
  1. Preheat oven to 350 degrees F. Spray a baking sheet with cooking spray and set aside.
  2. In a large bowl, combine peanut butter, sugar and egg until well mixed. Add chocolate chips, as desired.
  3. Using a spoon or disher, drop cookie dough on baking sheet. Press the dough down with the palm of your hand. The cookies do not spread much, so you don’t need to space them far apart. Bake cookies for 10 minutes. Remove and let cool.
